Broccoli Stuffed Focaccia

The broccoli stuffed focaccia is really tasty, yet healthy. Also ideal to take on a trip or a picnic, as it can easily be eaten cold.

Ingredients

  • 2.2 lbs Pizza dough
  • 1.5 lbs Broccoli (boiled)
  • 30 anchovies in oil
  • 40 pickled capers
  • to taste olive oil
  • 2 cloves garlic
  • 1 pinch chili powder

Preparation

  • To prepare the pizza dough click here. You will need to follow the recipe by halving the quantities; the dough obtained will be enough for an oven tray of size 14.17×11.81 inches. In a large pan, put some olive oil, peeled and halved garlic cloves, add boiled broccoli cut into pieces and cook for about 10 minutes, adding some water if they dry out. At this point, add the anchovy fillets, capers, and chili, and use a fork to mash the broccoli. Remove from heat and let cool. In the meantime, split the dough in half, forming two balls that you will roll out with the rolling pin, forming two rectangles the size of the baking tray.

    Place one on the greased baking tray, the other on parchment paper. Let rest for another half hour, then spread the broccoli mixture on top.

  • Close with the other sheet, seal the edges well to prevent the filling from escaping, spread the surface with olive oil.

  • Bake at 356°F for 30/35 minutes, until golden.

Tips/Advice

If you want to make your stuffed focaccia tastier, you can also add some sausage sautéed in a pan.

To get about 2.2 lbs of dough, you will need about 650 g of flour (obviously the other ingredients in proportion: thus 15 g of yeast, 25 ml of water, half a teaspoon of sugar, a teaspoon of flour for the preferment. For the dough 325 ml of water, 35 ml of olive oil, 1 level teaspoon of fine salt)
