Buttery Cookies with the Cookie Press

Today I had fun with my daughter making delicious buttery cookies with the cookie press: we changed several disks, tried to create various shapes, and the result was truly exquisite!

Ingredients

  • 1 3/4 cups All-purpose Flour
  • 1/3 cup Cornstarch
  • 2/3 cup Butter
  • 2/5 cup Sugar
  • 1 Orange zest
  • 1 teaspoon Baking Powder
  • 1 packet Vanillin (0.4 g)
  • 1 Egg (medium)
  • 2 Apricots (dried, pitted)

Preparation

  • In the mixer’s bowl, place the softened butter and whip it with beaters for a few minutes, then add the sugar and continue mixing until the ingredients are well blended.

    At this point, add the grated orange peel, vanillin, and continue mixing. Incorporate the room-temperature egg, mix again, then incorporate the flour, cornstarch, and baking powder.

    Finish working the dough by hand for a few minutes, creating a smooth dough ball.

    Take the cookie press, put in your preferred disk, insert part of the dough inside, shoot a few times in the air, as soon as you see the mixture coming out, place the cookie press vertically with the disk directly on the baking sheet, without parchment paper, without even greasing it with butter or anything else, otherwise the cookies won’t stick.

    With the cookie press, you can make one or two clicks, which will determine the size of the cookies.

  • Once the dough is finished, you can decorate the cookies with candied fruit (I used dried pitted apricots), bake at 350°F for 15-20 minutes

Tips

To better maintain the shape of the cookies, you can put the dough in the fridge for about twenty minutes before proceeding with your creations. I didn’t do it, but the cookies turned out great anyway.
