Ingredients
- 2 3/4 cups Manitoba flour
- 1/4 cup milk
- 0.7 oz fresh yeast
- 1/3 cup sugar
- 2 eggs
- 3 1/2 tbsp butter
- 1 pinch fine salt
- 1/3 cup sugar
- 3 1/2 tbsp butter
- 1.8 oz walnuts
- 1 tbsp ground cinnamon
- 3/4 cup powdered sugar (plus extra for dusting the cake surface)
- 1/2 tsp food coloring (liquid red)
- 1/2 tsp food coloring (liquid blue)
- 1 tbsp milk
Preparation
Activate the yeast by placing it in a glass half-filled with warm milk, a teaspoon of sugar, and a tablespoon of flour (taken from the total). Stir and wait a few minutes until a generous foam forms.
In a bowl, place the milk with the activated yeast, sugar, melted butter, eggs, salt, and whisk the ingredients together.
Add the flour and start kneading with your hands, placing everything on a work surface. Work it well until it is smooth and no longer sticky. Form a ball and place it in a floured bowl, covered with plastic wrap and a cloth. Let it rise for about 2 hours, it should at least double in size.
Once the rising time has elapsed, place the dough on a floured board, knead it again, and then roll it out with a rolling pin. You should form a rectangle measuring approximately 14×24 inches.
Melt the butter in the microwave, use a kitchen brush to spread the melted butter over the entire surface, then evenly sprinkle both the sugar and cinnamon and the chopped walnuts (if you prefer, you can mix sugar, cinnamon, and walnuts together and then distribute it over the dough). Roll from the long side to form a cylinder.
Butter and flour a donut pan with a diameter of about 9 1/2 to 10 inches and place the roll inside. Brush the surface with a bit of melted butter and sprinkle with sugar. Bake at 350°F for about 40 minutes. If the surface browns too much, cover it with foil.
Divide the powdered sugar into two equal parts, place it in two containers, add the red food coloring to one, the blue to the other, and 1/2 tbsp of milk in each container. Stir with a small whisk or fork. You should get a mixture that is not too liquid, so it doesn’t run off when placed on the cake.
Dust the cake surface with powdered sugar using a sieve, then make decorations with the red glaze, let it dry slightly, and then make more decorations with the blue glaze. Allow the glaze to solidify.
