You don’t have to be a bunny to love these Carrot Gnocchi! And the best part is you don’t even have to cook the carrots, you can use them raw, saving time. For those who love gnocchi, here are some super tasty recipes:

Ingredients
- 1.1 lbs carrots (cleaned)
- 2 cups all-purpose flour
- 4 pinches fine salt
- 3 tbsps grated Parmesan cheese
- 1 tbsp olive oil
- 2 pinches coarse salt (to salt cooking water)
- to taste butter (to season the gnocchi)
- to taste sage (to season the gnocchi)
Steps
Clean and wash the carrots. Cut them into rather coarse pieces and salt them.
Add two tablespoons of flour taken from the total amount.
Start blending and then add the grated Parmesan cheese and the oil.
When the carrots are well chopped, pour them onto a floured surface and start kneading.
Gradually add the flour and knead.
You need to obtain a smooth and no longer sticky dough.
Form rolls and cut the gnocchi with a knife or a scraper. Place them on the floured surface. If you like them ridged, pass them with the tines of a fork. You will get about 900 grams of gnocchi.
Fill a pot with plenty of salted water, once it boils, throw in the gnocchi. When they rise to the surface, wait a few seconds and then drain them.
I used a slotted spoon to drain them directly and tossed them into a pan where I had previously browned the sage in butter. Sauté them to flavor the gnocchi well and serve hot. You can sprinkle them with a bit of grated Parmesan cheese.
Tips, Advices
Using raw carrots will speed up the process and you’ll use less flour.
