The Castagnole, crunchy on the outside and crumbly on the inside, are really delicious, one leads to another, we love them and not only at Carnival. Adding a bit of liqueur will give the castagnole a super tasty touch, I used limoncello, but you can also use Strega liqueur or rum, depending on your taste.

Ingredients
- 1 egg
- 1.76 oz sugar
- 1 tbsp limoncello
- 1.41 oz butter
- 5.29 oz all-purpose flour
- 1 tsp baking powder (about 5 grams)
- 2 1/4 cups vegetable oil (for frying)
Steps
Place the egg with the sugar in a bowl and beat well with a whisk.
Now add the limoncello, the melted butter and mix again.
At this point, sift the flour with baking powder and add them to the mixture, starting to mix the ingredients.
Transfer the dough onto a floured work surface and knead for a few minutes until you get a smooth and well-mixed dough ball.
Make ropes the thickness of a finger.
Cut pieces the size of a hazelnut weighing about 20 grams. Try to make uniform ropes and pieces that are not too elongated, but as round as possible.
Now roll the obtained pieces into balls.
Fry the balls in a pan or a saucepan with hot but not too hot vegetable oil, otherwise you risk burning them on the outside while keeping them raw inside. Do not put too many together to avoid lowering the oil temperature. To avoid burning, I lower the heat to a minimum once I have added the castagnole.
Cook them for a few minutes; they should be golden brown.
Drain them with a slotted spoon and place them on a towel to remove excess oil. Sprinkle them with sugar.
I added limoncello, but you can also use Strega liqueur or rum, depending on your taste.
Be sure not to fry the castagnole in oil that is too hot, otherwise you risk burning them on the outside while keeping them raw inside. Do not put too many together to avoid lowering the oil temperature. To avoid burning, I lower the heat to a minimum once I have added the castagnole.
