Cauliflower, Peas, and Sausage Pie

Here is a Cauliflower, Peas, and Sausage Pie, great to prepare as a single dish, ideal for getting children to eat vegetables. I added sausage, but you can prepare it without and use tofu instead of Emmentaler: this way, you’ll have a vegetarian dish.

Ingredients

  • 28 oz Cauliflower
  • 7 oz Sausage
  • 28 oz Frozen peas
  • 1 cup Heavy cream
  • 3.5 oz Sliced Emmentaler cheese

Preparation

  • Wash, clean, and blanch the cauliflower.
    Drain it when it’s still a bit firm; otherwise, it will crumble too much during pie cooking.
    Blanch the peas in plenty of salted water.
    Drain them, place them in a mixer and puree.
    Add the heavy cream, ensuring the ingredients are well mixed.
    At this point, arrange the cauliflower in a 12-inch baking dish as shown in the photo.

  • On top, place the sausage in pieces, add a layer of pea puree, and cover everything with slices of Emmentaler cheese.
    Bake at 356°F for about 50 minutes.
