Cheesecake with Strawberry Jelly

Cheesecake is one of my favorite desserts: fresh, fragrant, soft, colorful, smooth, but with the crunchiness of the biscuit, in short, a combination of characteristics that make it unique! The cheesecake with strawberry jelly is a summer dessert, both because there’s no need to turn on the stove and because it has colors that remind of this season.

Ingredients

  • 9 oz Digestive biscuits
  • 11 tbsps butter
  • 15 g gelatin sheets
  • 14 oz low-fat yogurt
  • 7 oz heavy cream
  • 4 tbsps powdered sugar
  • 9 oz ricotta cheese
  • 7 oz cream cheese
  • 14 oz strawberries
  • 6 oz sugar
  • 10 g gelatin sheets
  • 1 lemon juice

Preparation

  • Blend the digestive biscuits until you get a powder. Add the melted butter and mix it with a spoon.
    Take a 10-inch springform pan, spread the mixture evenly and flatten the base with the back of a teaspoon. Put everything in the fridge to chill for at least half an hour.

  • Soak 15 grams of gelatin in a bowl of cold water for 10 minutes.
    In a large bowl, combine the cream cheese with the ricotta, mix well, add the four tablespoons of powdered sugar and the yogurt.
    In a small bowl in the microwave, heat 1/4 cup of fresh cream, squeeze the gelatin and dissolve it in the cream, add it to the mixture obtained.
    Whip the remaining cream and gently fold it into the rest so it doesn’t deflate.
    Pour the mixture over the biscuit base and flatten with a spoon.
    Let it set in the fridge for at least two hours, covering the cheesecake with plastic wrap.

  • Soak 10 grams of gelatin in plenty of cold water.
    Wash the strawberries, remove the stems, cut them into halves or quarters depending on the size, and let them macerate in a saucepan with the sugar and lemon for about half an hour. Put them in a mixer until you get a puree.
    Squeeze the gelatin and put it in a bowl with a little strawberry puree, warm it for a few seconds in the microwave, mix until completely dissolved, and add to the rest of the strawberry puree.
    Pour the strawberry jelly obtained over the cheesecake, covering its surface well.
    Place it in the fridge for at least another hour to set the jelly.

Notes

For this cake, I added wafer butterflies and gummy ladybugs as decoration since I made it for my daughter’s birthday!
The preparation time I calculated does not include waiting times, such as the cheesecake rest in the fridge to set between phases, as well as the final cooling time before eating it.
