This chestnut sauce with red wine has a really unique taste. You can enjoy it with croutons as a regular soup or use it as an accompaniment to meat dishes, whether it’s sausage or wild boar, it will give it an even more unique flavor.

Ingredients
- 17 oz Red wine
- 1 1/4 cups Water
- 14 oz Chestnuts (cooked)
- 3 tbsp Cream (for cooking)
- 2 Broth cubes (vegetable broth, 28g each)
- 1 sprig Rosemary
- to taste Croutons
- 1 Onion
- 1 tbsp Olive oil
Preparation
Place the oil with the chopped onion in a saucepan and sauté. Add the cooked chestnuts, wine, water, broth cubes, cream, rosemary, and cornstarch.
Cook for about 20 minutes, then blend in a mixer or with an immersion blender until smooth. Return to the saucepan and continue cooking for another 20 minutes. If the sauce isn’t smooth, blend again.
Serve with warm croutons.

You can choose the red wine you prefer, I used a Bardolino.
