The chèvre chaud (warm goat cheese) salad is really a special dish, where goat cheese with the addition of honey and almonds or walnuts gives a truly special taste. We tasted it in Nice, France, and we immediately fell in love!

Ingredients
- 2 tomatoes (about 4 oz each)
- cups lettuce (iceberg (about 200 g))
- to taste fine salt
- to taste dried oregano
- to taste olive oil
- 3 slices sliced sandwich bread (pancarrè)
- 4 oz goat cheese (about 120 g)
- 4 teaspoons honey
- 10 almonds (or walnuts)
Steps
Wash and slice the tomatoes into not-too-thin slices.
Dress the tomatoes with olive oil, fine salt and dried oregano.
Wash and tear the lettuce. Dress it with olive oil and fine salt.
Arrange half of the tomatoes and half of the dressed lettuce on a plate.
Toast the slices of sandwich bread and cut each slice in half diagonally.
Cut the goat cheese into slices that are not too thick and place two or three slices on each half slice of bread. Warm them in a small oven or regular oven for a few seconds until the cheese starts to melt.
Place the slices of bread with melted cheese on the plate over the salad.
Now finish with two teaspoons of honey on each piece.
Also add the almonds that you previously toasted and crushed. If you prefer, you can use walnuts instead of almonds.
All that’s left is to enjoy this dish, as simple as it is spectacular!
