Chicken and Green Bean Rolls with Persian Blue Salt

A very easy and quick dish to prepare in the evening for a quick dinner. It could be a good idea to get kids to eat vegetables!

  • Difficulty: Easy
  • Cost: Cheap
  • Preparation time: 20 Minutes
  • Cooking time: 20 Minutes
  • Portions: 4 servings
  • Cuisine: Italian

Ingredients

  • 1.3 lbs Chicken breast
  • 10.5 oz Green beans
  • as needed Poppy seeds
  • as needed Salt (Persian blue)

Preparation

  • Clean the green beans and blanch them in salted water for about 10 minutes.
Beat the chicken breast to make the slices thinner and season it with Persian blue salt (for information click on the link).
Place the chicken slice on a surface and put about 7/8 green beans on it, possibly of the same length. Roll the meat with the green beans inside and secure it with a toothpick. Sprinkle the rolls evenly with poppy seeds.
Heat a grill and cook the roll over medium heat for about 3 minutes per side, turning it 4 times.

Notes

Persian Blue Salt has a slightly spicy taste, you can use it to flavor meats or fish, it will give them an extra touch.
To speed up preparation times, I freeze the blanched green beans and take them out when needed.
