The Chicken, Spinach and Potato Pie is truly delicious, a slightly different idea, both soft and crunchy.

Ingredients
- 1.3 lbs chicken breast (sliced)
- 14 oz spinach (blanched)
- 1.1 lbs potatoes
- 1 puff pastry (rectangular)
- to taste poppy seeds
- to taste pecorino sardo cheese (grated)
- 2 pinches fine salt
- to taste olive oil
- to taste nutmeg
- 3 eggs (medium)
Preparation
Place the spinach, eggs, salt, and pecorino cheese in the mixer and blend until the ingredients are well combined.
Peel the potatoes and slice them thinly, about 1/8 inch thick.
Line the rectangular baking tray with parchment paper, place the puff pastry on top, then make a layer with the sliced chicken breast, season with salt, and sprinkle the surface with poppy seeds.
Cover with the spinach mixture, and finally make a layer with the potato slices.
Season with salt, sprinkle with grated nutmeg, and drizzle some olive oil over the top.
Bake at 356°F (180°C) with fan for 45 minutes. In the last 5 minutes, turn on the grill to brown the potatoes.
