  • Difficulty: Easy
  • Cost: Cheap
  • Preparation time: 30 Minutes
  • Cooking time: 30 Minutes
  • Portions: 30 balls of about 1 oz each
  • Cuisine: Italian

Ingredients

  • 1.1 lbs Beef (ground)
  • 1.4 oz Bread (stale)
  • 6 tbsp Milk
  • 1.8 oz Pecorino cheese (grated)
  • 1 tsp Ginger powder
  • 2 pinches Parsley (dried)
  • 2 pinches Black pepper (ground)
  • 6 pinches Smoked salt
  • 3 tsp Lemon juice
  • 2 pinches Chives (dried)
  • 2 pinches Nutmeg (grated)
  • 1 tbsp Breadcrumbs
  • 2 pinches Rosemary (dried)
  • 2 Eggs
  • 2 Puff Pastry (square 8 oz)

Preparation

  • Soak the stale bread in milk.

Blend it in the mixer to chop it finely.

In a bowl, add the soaked stale bread, ground beef, eggs, Pecorino cheese, ginger, parsley, pepper, smoked salt, lemon juice, chives, nutmeg, rosemary, and breadcrumbs.

Mix well to blend the ingredients.

Form small balls with the mixture weighing about 1 oz each and place them on a baking tray covered with parchment paper.

Bake for 10 minutes at 356°F with a fan.

Remove from the oven and let cool.

  • Meanwhile, cut the puff pastry into about thirty 3×2 inch rectangles and wrap a meatball in each rectangle, making sure to seal the edges well.

Decorate the balls as desired with leftover strips.

Bake at 356°F for 20/25 minutes with a fan.

Finally, brown by turning on the oven grill if necessary, being very careful not to burn them.

Notes

When covering the meatball with puff pastry, make sure that the seam is facing down, i.e., where the meatball rested on the baking tray.

To better adhere the puff pastry strips, I brushed with a little milk. If you wish, you can brush with egg yolk.
