Christmas Spinach Gnocchi is simply a way to present the dish as a Christmas tree, born from the intention of serving this first course in an unusual way. Try it if you like the idea!

Ingredients
- 21 oz spinach, frozen (cooked)
- 2 1/2 cups all-purpose flour
- 1 egg
- 2 pinches fine salt
- 2 1/8 cups milk
- 1/3 cup all-purpose flour
- 3 1/2 tbsp butter
- 3 pinches fine salt
- 2 pinches black pepper (ground)
- to taste nutmeg
- to taste pink pepper (in berries)
- to taste potato gnocchi, cooked (for the tree trunk)
Preparation

To prepare the Bechamel sauce, follow the recipe you find here.
Let it cool slightly in a bowl.
Fill a pot with plenty of water, as soon as it boils add the salt and gnocchi, as soon as the water starts to boil again and the gnocchi rise to the surface, drain them and place them in a bowl.
Arrange the gnocchi on a plate to form a triangular shape.
For the trunk, I used classic potato gnocchi.
Put the bechamel sauce in a syringe or piping bag with a star nozzle, make small tuft decorations and add pink pepper berries on top.
You can also use a plain nozzle and decorate the tree with strips of bechamel sauce, then always add some pink pepper berries.
Let the remaining bechamel sauce warm up and put it on the table, so everyone can add it to their plate if they like.
Pink pepper berries are slightly spicy, if you don’t like them, you can discard them.
This decoration is faster than the other, so you won’t risk serving a cold dish.
Tips/advice
In this type of recipes, it’s not easy to indicate the exact doses, just that the spinach may be a little more or less watery and the amount of flour could vary. Remember that the dough must be soft but workable, not too sticky anymore. Always use flour to help avoid it sticking to the work surface.
