They are truly delicious, you can make them with either ricotta or mascarpone. In this recipe, I chose to make Coconut Balls with Mascarpone and I assure you they are like cherries, one leads to another. A must-try during the holidays and not just then!

  • 0.71 oz Grated coconut (in the mixture + necessary for coating)
  • 20 Blanched almonds

Preparation

  • Break the vanilla wafers into pieces and put them in a blender, blend until you get a fine flour.

  • Now place the mascarpone, powdered sugar, and 0.71 oz of grated coconut in a bowl.

  • Combine them with a fork or, if you prefer, with your hands.

  • Take a bit of the mixture and put it in your hand.

Place the almond on top and cover with a little bit of the mixture.

Form balls by rolling them in your palms.

You will get about 20 balls weighing approximately 0.42 oz each (including the almond in the center).

Put them in the fridge for at least an hour.

Tips/Advice

Since I don’t like overly large sweets, I made rather small balls weighing about 0.42 oz each.
