Cookies with Dried Fruit

These Cookies with Dried Fruit are really tasty, without eggs and with a unique taste. I used apricots, pineapple, and a kumquat (Chinese mandarin) to give them a touch of bitterness, but you can use the fruit you prefer, or even candied fruit, they will be delicious anyway.

Ingredients

  • 5.5 tbsp butter
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 pinch fine salt
  • 0.35 cups sugar
  • 3.5 oz candied fruit

Preparation

  • In a bowl, put the flour, baking powder, salt, and sugar, and mix to combine the ingredients.

  • Cut the dried fruit into small cubes.

  • Add the previously melted butter to the dry ingredients and begin to combine them.

  • Now add the previously chopped dried fruit and mix with a fork, then knead with your hands until the ingredients are well combined.

  • You will get a smooth and compact dough, slightly sticky.

  • Form a roll about 10 inches long, wrap it in plastic wrap, and leave it in the fridge for about half an hour.

  • Once the time has passed, take the dough out of the fridge, remove the plastic wrap, and cut 25 slices about half an inch thick.

    Place them on a baking tray covered with parchment paper and bake for about 10/12 minutes in a static oven at 350°F.

  • The cookies will be ready when they are golden brown.

Tips/Advice

You can use the dried fruit you prefer, or candied fruit, your cookies will be delicious with both alternatives.
