I love ethnic cuisine and here I present my version of Couscous with chicken and vegetables, a typical recipe from the Maghreb and North Africa. To speed up the preparation, I used pre-cooked couscous, which really takes only a few minutes and is immediately ready. I followed the cooking instructions on the package, which are usually accurate.

Ingredients
- 1.76 lbs Chicken breast
- 7 oz Canned chickpeas
- 3.5 oz Fava beans (shelled)
- 2 Tomatoes (about 1 lb)
- 7 oz Trombetta zucchini
- 1 Onions
- 1 packet Saffron (0.1 g)
- 1 clove Garlic
- 2 tsps Turmeric powder
- 1 tsp Ginger powder
- 1 tsp Fennel seeds
- 1 tsp Cumin seeds
- 1 pinch Chili powder
- 4 leaves Bay leaves
- to taste Fine salt
- 2 pinches Black pepper (ground)
- 7 oz Couscous
- 1 cup Water
- 1 tbsp Olive oil
- 1 tsp Fine salt
- 1 oz Butter
Preparation
Wash the tomatoes and zucchini, cut the tomatoes into cubes and the zucchini into small pieces.
Remove the skin from the fava beans and finely chop the onion.
Cut the chicken breast into small pieces.
Take a fairly large pan, add some oil and sauté the onion with the garlic.
Add the canned chickpeas, shelled fava beans, diced tomatoes, saffron, pepper, diced chicken, a few tablespoons of water, and sauté for a few minutes.
Now season with the spice mix, add the bay leaves, adjust the salt and cook for about 40 minutes.
If the mixture dries out, add some water during cooking.
I used pre-cooked couscous and followed the instructions on the package, which I indicate below.
Put 1 cup of water in a saucepan with a tablespoon of oil and a teaspoon of fine salt.
As soon as it boils, add the couscous and cook for 2 minutes, until it swells and absorbs all the water.
At this point, add the butter, stir with a fork, trying to fluff the couscous, leave it on the heat for another 2/3 minutes.
Serve it with the chicken and vegetable stew.
Tips/Advice
Couscous is rich in aromas and spices that I love, when you prepare it the entire house fills with memories of distant places.
