Couscous Baskets with Fish Filling

Couscous is typical of North Africa, but it is also widespread in Sicily. It is a food made from steamed wheat semolina grains that usually accompany meat, fish, and vegetable dishes. I love it and enjoy finding variations to serve it with always new recipes.  

These Couscous Baskets with Fish Filling are excellent as a festive appetizer or for Sunday lunch.

Ingredients

  • 1.1 lbs mixed (seafood for risotto, frozen)
  • 7 oz Cherry tomatoes
  • 1 Zucchini
  • 1 Onions
  • to taste Fine salt
  • to taste Black pepper
  • to taste Curry
  • to taste Parsley
  • 1.25 cups Water
  • 10.5 oz Couscous
  • 1 tsp Coarse salt
  • 1 tbsp Olive oil
  • 3 Eggs (medium)
  • 3 tbsps Parmesan cheese (grated)

Preparation

  • In a pan, put some olive oil, chopped onion, diced zucchini, quartered cherry tomatoes, and the mixed seafood.

    Season with salt, pepper, add parsley and curry, cook for about 30 minutes.

  • With these doses, you will get 6 couscous baskets.

    Put 1.25 cups of water in a pot and bring it to a boil.

    Add a teaspoon of coarse salt and then the couscous.

    Mix the mixture, turn off the heat and cover with the lid.

    Once it has absorbed all the water, add the olive oil and fluff with a fork.

    Once cooled, add the Parmesan cheese and eggs.

    Mix well and cover previously buttered molds, ensuring to leave a hollow inside to put the seafood mixture.

    Bake with the fan at 350°F for about 20 minutes.  

    Remove the couscous baskets from the oven, gently detach them from the molds (if you wish, you can line the mold with slightly dampened and wrung-out parchment paper; this should make it easier to extract the baskets).

    Fill the baskets with the seafood mixture and serve hot.

Tips

I usually use frozen seafood mix, as sometimes I don’t have much time to cook, and I find it a valid and tasty alternative to fresh fish. Of course, you can also use fresh fish; a mix of mussels, surimi, clams, and cuttlefish is excellent.
