  • Difficulty: Easy

  • Cooking methods: Stovetop
  • Cuisine: Italian
  • Seasonality: All seasons

Ingredients

  • 9 oz carrots (already cleaned)
  • 1 tbsp breadcrumbs
  • 3 tbsps grated Parmesan cheese
  • 3 pinches fine salt
  • to taste sweet paprika
  • to taste olive oil
  • to taste black pepper (ground, optional)

Steps

  • Peel the carrots, clean them, and cut them into matchsticks. They shouldn’t be too thick, or they will take too long to cook. Place them in a bowl.

  • Add the breadcrumbs and one tablespoon of grated Parmesan cheese.

  • Now add a bit of paprika and a pinch of fine salt.

  • Mix well to combine all the ingredients. I used my hands.

  • Pour some oil into the pan, heat it up, and then add the carrots.

  • Try to arrange them at the bottom of the pan so that they cover it well, without overlapping each other. Pour the remaining breadcrumbs from the bowl, and sprinkle with one tablespoon of grated Parmesan cheese. Slightly increase the heat, being careful not to burn them.

  • When they are golden and crispy, turn them, sprinkle them with another tablespoon of Parmesan, and cook until golden.

  • If you like, you can add a little ground black pepper.
