Ingredients
- 9 oz carrots (already cleaned)
- 1 tbsp breadcrumbs
- 3 tbsps grated Parmesan cheese
- 3 pinches fine salt
- to taste sweet paprika
- to taste olive oil
- to taste black pepper (optional ground)
Steps
Peel the carrots, clean them, and cut them into matchsticks. They shouldn’t be too thick, or they will take too long to cook. Place them in a mixing bowl.
Add the breadcrumbs and one tablespoon of grated Parmesan cheese.
Now add a bit of paprika and a pinch of fine salt.
Mix well to combine all the ingredients. I used my hands.
Pour some oil into the pan, heat it, and then add the carrots.
Try to arrange them on the pan’s bottom so that they cover it well, without overlapping each other. Pour the remaining breadcrumbs into the mixing bowl and sprinkle them with a tablespoon of grated Parmesan cheese. Slightly increase the heat, being careful not to burn them.
When they are golden and crispy, turn them over, sprinkle them with another tablespoon of Parmesan, and cook until golden.
If you wish, you can add a little ground black pepper.
