Definitely a picnic with family and friends is one of the ways most people love to celebrate Easter Monday, a day trip with various dishes that can also be prepared in advance! For the Easter Monday Picnic, I thought of these dishes, I hope you will like them too!

Ingredients
- 2/3 cup All-purpose flour
- 1.8 oz Mortadella (sliced)
- 1.8 oz Fresh spreadable cheese
- 1 tbsp Olive oil
- 1 Egg (medium)
- 1 packet Instant yeast for savory preparations (equal to 5g)
- 1 pinch Fine salt
- as needed Butter (spray)
- 1 Puff pastry (round, 230g)
- 1.8 oz Mortadella (sliced)
- 1.8 oz Emmentaler
- 2 Eggs (medium)
- 1 tbsp Parmesan cheese (grated)
- 1 pinch Fine salt
- 1 Frankfurter (about 2.8 oz)
- 1.1 oz Puff pastry (leftover from the tart recipe)
- 1 Egg (for brushing, you can use the one left from the tarts)
- 8 slices Sandwich bread
- 1 Tomato
- as needed Lettuce (about 8 small leaves, 2 per sandwich)
- 3 Eggs (medium)
- 2 pinches Fine salt
- 1 pinch Black pepper (ground)
- 2 tbsp Mayonnaise
- as needed Olive oil
- as needed Oregano
- 10 Spicy round peppers
- 2.8 oz Canned tuna in oil (equal to 1 can)
- 10 Green olives (pitted)
- 2 cups White wine vinegar
- 2 cups Olive oil
Preparation
In a bowl, put the dry ingredients, namely the flour and the yeast.
Using the grater you usually use for lemon zest, grate the mortadella, place them in a container, add the spreadable cheese, the egg, the Parmesan, the olive oil, a pinch of salt, and mix well with a whisk.
Add this mixture to the flour and always mix with the whisk.
Butter the muffin molds with the spray butter, I made 12 (diameter 3.15 inches, height 1.38 inches) filling them a little more than halfway with the mixture.
Place in the oven at 350°F for 20 minutes.
Always do the toothpick test before removing from the oven.Unroll the puff pastry and cut out 8 circles with a diameter of 3.75 inches.
Using the lemon zest grater, grate both the mortadella and the Emmentaler and place them in a bowl.
Add the egg, grated Parmesan, and mix well with a whisk.
Divide the filling into 4 parts and place it on each puff pastry disc.
Moisten the edges with a little water, place the other disc on top and seal the edges using the tines of a fork.
If desired, you can decorate the surface with small leaves cut out from the remaining puff pastry.
Brush with the other beaten egg.
Place in the oven at 350°F for about 20 minutes, until the tarts are golden.To use up the leftover puff pastry from the tarts, knead it again, roll it out with a rolling pin, and cut strips about 0.4 inches wide.
Cut the frankfurter in half, skewer it with a skewer stick, and wrap it all around with puff pastry strips.
Brush with beaten egg and bake at 350°F for about 20 minutes, until golden.Prepare the omelet by beating the eggs with fine salt and pepper.
Grease two small pans with a diameter of 8 inches with spray butter.
Divide the egg mixture into two parts and cook in the two pans for about 5 minutes, flipping halfway through.
Wash, slice, season the tomato with fine salt, olive oil, and oregano.
Take a slice of sandwich bread, spread a little mayonnaise on it, place a piece of omelet on top, two slices of tomato, two slices of lettuce, close it with the other slice of sandwich bread, and cut it into a triangle into two parts.

Notes
For this menu, I prepared only two frankfurter skewers, as I used the leftover puff pastry from the tarts. Of course, you can use a new puff pastry, which I recommend rectangular, and a pack of frankfurters if you want to increase the doses.
You can also chop the mortadella using the mixer.
