The Egg White Bundt Cake is truly surprising! I flavored it with lemon juice and lemon essence to make it even more delicious, but you can also choose orange juice if you prefer. It’s also very useful if you have excess egg whites to use up. For Valentine’s Day, I decorated it with lots of little hearts and water glaze to make it even more beautiful.

Ingredients

  • 5.3 oz sugar
  • 0.4 cup vegetable oil
  • 8.8 oz all-purpose flour
  • 1 packet baking powder (16g)
  • 4 tbsps lemon juice
  • 1/2 phial lemon essence (equivalent to 2ml)
  • 6 oz egg whites
  • 3.5 oz powdered sugar
  • 4 tsps water (add little by little)
  • as needed sugar pearls (in the shape of colored hearts)

  • 1 Mold bundt cake

Steps

  • Blend the oil with the sugar in a mixer.

  • Now add the sifted flour with the baking powder, also add the lemon juice and essence.

  • Try to mix them well with a spatula, it will take a little patience.

  • Whip the egg whites to very stiff peaks, then gently fold them into the flour mixture. Mix from bottom to top without deflating them.

  • Pour the mixture into the mold. Bake at 350°F for about 30 minutes. Always check the doneness with a toothpick.

  • Put the powdered sugar in a bowl, now add the water little by little, mixing well. The mixture should not be too liquid or too thick. It should spread well but not run.

  • Decorate the cake with the water glaze.

  • To finish, also add some sugar hearts. They will stick easily by placing a little glaze underneath.

  • And now enjoy!

Tips and Advice

To prepare the water glaze, you can also use slightly warm water. Be sure to add it little by little to avoid a glaze that’s too liquid or having to add more powdered sugar.

I added the hearts because I prepared this cake for Valentine’s Day, but you can decorate it as you like, using your imagination.

If you want to taste the lemon flavor even more, you can replace the water in the glaze with lemon juice.
