Ingredients
- 3 eggplants (approximately 8.8 oz each)
- 1 tablespoon olive oil
- 3.5 oz fresh cream cheese
- to taste chives
- to taste fine salt
- 5.3 oz smoked salmon
Steps
Wash the eggplants, remove the ends, and cut them into slices about 0.4 inches thick. Place them on a colander, salt them, and let them rest for about half an hour to release excess water.
Heat the grill and place the eggplants to grill. After three or four minutes, turn the eggplants over and cook them on the other side for the same amount of time. The heat should not be too high, or they may burn.
Allow them to cool. Place them in a bowl and season with a bit of olive oil and a pinch of salt.
In a bowl, season the cream cheese with some chives and a pinch of salt.
Spread a slice with the seasoned cheese.
On top of the eggplant slice, place some smoked salmon and proceed with two more slices.
Now stack the three eggplant slices on top of each other. Finish the tower by placing a slice of grilled eggplant on top.
Pierce them with a wooden skewer and place them on a tray. With these quantities, you will get five eggplant towers.
