Ingredients
- 3 eggplants (about 9 oz each)
- 1 tbsp olive oil
- 100 g cream cheese
- to taste chives
- to taste fine salt
- 150 g smoked salmon
Steps
Wash the eggplants, remove the ends, and slice them about 0.5 inches thick. Place them on a colander, salt them, and let them rest for about half an hour to release the excess water.
Heat the grill and place the eggplants to grill. After three or four minutes, flip the eggplants and cook the other side for the same amount of time. The flame should not be too high, otherwise, they might burn.
Let them cool. Place them in a bowl and dress with some olive oil and a pinch of salt.
In a bowl, mix the cream cheese with some chives and a pinch of salt.
Spread a slice with the seasoned cheese.
Place some smoked salmon on top of the eggplant slice and continue with two more slices.
Now stack the three eggplant slices on top of each other. Finish the tower by placing a grilled eggplant slice on top.
Insert a wooden skewer through them and place them on a platter. With these amounts, you will get five eggplant towers.
