Farro Salad with Feta and Kiwi

The farro salad with feta and kiwi is undoubtedly the result of an unusual combination, but I found the pairing truly delicious. Try it yourselves and let me know. We added meat, but you can easily omit it, the taste will still be great!

Ingredients

  • 1 1/3 cups pearled farro
  • 1 1/3 cups frozen broad beans (peeled, about 150 grams)
  • 1 3/4 cups cherry tomatoes
  • 10 green olives in brine (about 100 grams)
  • 7 oz feta cheese
  • 3/4 lbs chicken breast (sliced, optional)
  • 4 kiwis (about 500 grams)
  • to taste salt
  • to taste olive oil

Preparation

  • Place in a pot with about 1.5 liters (6 1/3 cups) of water, once it boils add the pearled farro and the peeled broad beans. Cook for about 30 minutes (follow the instructions on the package). Drain with a colander, let cool, and transfer everything to a large bowl.

  • Heat the sliced chicken breast in a pan with a bit of oil, let it cool, cut it into small pieces, and add it to the farro.

  • Now wash the cherry tomatoes, cut them into quarters, season them with salt and oil. Cut the feta into small cubes, slice the olives, removing the pit. Wash, peel, and dice the kiwis as well. Add everything to the farro and broad beans. Adjust the salt and oil if necessary, mix well.

  • And enjoy your meal!

Tips

If you want a vegetarian dish, leave out the meat, it will still be tasty.
