Fig Tart Filled with Milk Cream

I wanted to enjoy a tart a bit different from the usual. I have seen many with various flavors of jam, with custard, with chocolate, with fruit, but I wanted one that had two textures: the soft and crunchy one of shortcrust pastry and the soft and delicate one of pudding. The Fig Tart Filled with Milk Cream satisfied my needs, all completed by the addition of figs. The layer of cream is not very thick, to better taste the figs.

Ingredients

  • 1 1/4 cups All-purpose flour
  • 1/4 cup Sugar
  • 4 tbsp Butter
  • 1 Egg
  • 3/4 cup Milk
  • 1 Egg
  • 1/3 cup All-purpose flour
  • 1/3 cup Sugar
  • 10 Fresh figs

Preparation

  • Place the flour in a mound on a pastry board, make a hole in the center, add the egg, sugar, softened butter, and start kneading, without working the ingredients too much, until the dough is smooth and no longer sticky. Form a ball, put it in the fridge for about half an hour. At this point, roll it out with a rolling pin, forming a circle with which you will cover a 9-inch mold, previously buttered and floured.

  • Prick the shortcrust pastry now with a fork to prevent it from puffing up during cooking.

  • In a bowl, put the room temperature egg and sugar, beat them well with a whisk.

    Add the flour, mix again and finally the room temperature milk in a thin stream.

    Mix the ingredients, pour them into the mold with the shortcrust pastry.

    Wash, peel, and cut the figs in half with a knife and add them inside the mixture.

    Place in the oven at 340°F for about 30 minutes and at 355°F for about another 20/25 minutes.

    Always do the toothpick test.

Notes/Suggestions

Initially keep a lower temperature, to prevent the cream from cooking too quickly, risking hardening.
