Fiordilatte Ice Cream Sandwich

Ingredients

  • 1/4 cup sugar
  • 3 1/3 tbsp water
  • 1/2 cup whipping cream (chilled)
  • 2/3 cup partially skimmed milk (chilled)
  • 1 tsp agar agar
  • 2 drops vanilla extract (or one sachet of 0.4 g vanillin)
  • 30 cookies (novellini)

Steps

  • Put the water with the sugar in a small pot, stir with a whisk, bring to a boil until the temperature reaches 216-217°F, never let it exceed 230°F. Boil for about five minutes, the syrup will start to thicken slightly. Now let it cool down.

  • Put about half the milk in a cup, add the agar agar and heat it in the microwave. It must boil; otherwise, the agar agar will not activate. Let it cool slightly, stirring it occasionally so it does not set. It should only cool slightly; otherwise, it will set, and you’ll have to prepare it again.

  • In a bowl, pour the remaining milk, the whipping cream, the slightly cooled milk with agar agar, the cold glucose syrup, and the drops of vanillin, and mix well with a whisk to combine everything. Put the bowl in the freezer, remembering to stir it about every half hour.

  • Line a square pan with 8-inch sides with cookies, take the ice cream out of the freezer, stir it, and let it soften slightly. Now pour the ice cream over the cookies, making sure to level it well over the cookies.

  • Then make another layer of cookies on top, exactly like the one below.

  • Place in the freezer for about two hours.

  • With an aluminum spatula, separate the small ice cream sandwiches from one another. Gently heat the bottom and edges with your hands; you’ll be able to divide and separate them better.

Suggestions and Tips

The agar agar must boil, or it will not activate. Let it cool slightly before adding it to the mixture; if it cools too much, it risks solidifying, and you’ll have to prepare it again.
