Fish-Filled Bundles

The Fish-Filled Bundles vaguely resemble calzones but are made with puff pastry and a filling that tastes of the sea. Moreover, to avoid frying, I baked them! I considered them as an appetizer, so two bundles per person (the Farcigusto package contains 16 puff pastry discs), but they could be a tasty main course if desired.

Ingredients

  • 1 puff pastry (Farcigusto Buitoni)
  • 1 tomato (blended)
  • 2 egg whites
  • 1 clove garlic
  • 1 1/2 bouillon cube
  • 1/4 cup olive oil
  • 1 tsp fine salt
  • 3 zucchini
  • 10.5 oz seafood mix (frozen seafood mix for risottos)

Preparation

  • Cut the zucchini into strips and cook them in a pan with the blended tomato, 1/2 bouillon cube, 2 tablespoons of oil, and salt. Cook the frozen seafood mix in a pan with 2 tablespoons of oil and a garlic clove until well dried. Then, add the cooked zucchini to the pan with the fish and mix the ingredients. Take the discs and put some fish mixture as filling, fold in half, and press the edge with a fork to seal it. Brush with beaten egg white and bake at 350°F for about 20 minutes.

Tips/advice

For these bundles, I usually use ready-made puff pastry discs (there are 16 in a package), but if you like, you can use the classic rolled puff pastry, obviously cutting it into smaller discs.
