Focaccia with Potatoes and Green Olives

Focaccia with potatoes and green olives is a soft snack, perfect for your children or to enjoy during a family evening or with friends.

Ingredients

  • 2 1/2 cups All-purpose flour
  • 3/4 cup Water
  • 0.35 oz Fresh yeast
  • 1 teaspoon Fine salt
  • 20 Green olives
  • 2 Potatoes (medium)

Preparation

  • Place the warm water (about 95-97°F) in a bowl, add the crumbled yeast, and dissolve it well by stirring with a spatula.
    Then incorporate the flour, mix with a spatula for 1-2 minutes.
    Add the salt and mix until well absorbed (it takes only a few seconds).
    Cover with plastic wrap, place the container in the fridge at a temperature of 41-43°F for at least 24 hours.
    Remove the dough from the fridge, roll it into a ball gently without pressing too hard.
    Dust a cloth with flour, place the ball on top, cover it with another cloth, and let it rise for about an hour.
    Take a baking pan with a diameter of 12 inches, butter it, spread the dough evenly, and let it rise again for about half an hour.

  • Spread a little oil on the surface of the focaccia.
    Wash, peel, and cut the potatoes into slices not too thin.
    In a pan with a little water, place the potato slices, lightly salt them, and cook with the lid on for about 10 minutes, or until they are soft.
    Place the slices on the focaccia and add the olives.
    Bake at 356°F for 15 minutes, using a fan oven.

Notes

For this recipe, you can use the focaccia dough that is stored in the fridge, the recipe can be found here. The indicated amount is right for this focaccia, but if you wish, you can prepare more and store it in the fridge for about a week, taking a bit each time you want to make a pizza or focaccia.
You can also top it with 250g of potatoes or with 100g of onions, previously cooked with a little oil, a pinch of fine salt, and half a glass of water.
