Fried Zucchini Parmesan is a bit lengthy to prepare, but the resulting taste is truly unique and all the effort spent slicing and frying the zucchini will be well worth it. I love it and recommend you try it. I usually fry a little extra zucchini, you’ll see they’ll be a hit!

Ingredients
- 2 cups tomato sauce
- 1 onion (about 50 grams)
- 1 teaspoon sugar
- 2 pinches table salt
- 1 carrot (about 50 grams)
- as needed olive oil
- 14 oz zucchini
- 1 1/4 cups all-purpose flour
- 3 pinches table salt
- 1 1/4 cups vegetable oil
- 5 oz cooked ham (sliced)
- 2 mozzarella (each about 100 grams)
- as needed Parmigiano Reggiano DOP (grated)
Preparation
In a pot, put some olive oil, the finely chopped onion and carrot. Sauté for a few seconds, add the tomato sauce, salt, and sugar, and cook for about 40 minutes, stirring occasionally. Adjust salt and sugar if necessary.
Meanwhile, wash the zucchini, and with a mandolin or a vegetable peeler, slice them into thin slices.
Lightly salt them and then flour them well. The flour amount is indicative, depending on how much is absorbed by the zucchini.
In a skillet, put the vegetable oil; once hot, add the floured zucchini slices in batches and cook until golden. Remove them from the pan and place them on a plate covered with paper towels to absorb excess oil. Continue this way with all the zucchini slices. If the oil is insufficient, add more and fry the zucchini only when it is hot.
Spread a little sauce on the bottom of a square baking dish measuring 8 inches per side, arrange the fried zucchini slices for the first layer, then add another layer of sauce.
Continue with a layer of ham, and lastly, the diced mozzarella.
Now make another layer of zucchini, then sauce, ham, and mozzarella. Continue again with a layer of zucchini and finally cover with sauce and a generous sprinkle of grated Parmesan. Bake at 350°F for about 30 minutes.
