From India: Broad Bean, Bean, Potato, and Duck Curry

I love ethnic cuisine, and I enjoy trying dishes rich in spices, with colors and aromas that fill the house with images of distant places! This time I wanted to try cooking a dish with an Indian flavor, but using an unusual meat, duck. The Broad Bean, Bean, Potato, and Duck Curry is rich in taste and will surprise you with every bite! If you prefer, you can easily use chicken instead of duck; in this recipe, I wanted to vary, but I guarantee that the taste will still be exquisite.

Ingredients

  • 2 1/4 cups frozen broad beans
  • 2 1/4 cups borlotti beans (frozen)
  • 14 oz potatoes
  • 1.1 lbs duck breast
  • 1 onion
  • 2 teaspoons curry (powder)
  • 2 teaspoons ginger powder
  • 2 teaspoons garam masala
  • 1 teaspoon cumin seeds
  • 2 tablespoons vegetable oil
  • 2 teaspoons turmeric powder
  • 3 cloves garlic
  • 1 lemon juice (juice of one lemon)
  • 1 pinch chili powder
  • 2 teaspoons chives (dried)
  • 1 3/4 cups tomato sauce
  • 2 tablespoons sesame seeds
  • to taste fine salt

Preparation

  • Defrost the beans and broad beans, remove the outer white skin from each seed, this will allow them to cook faster and be more digestible. Wash, peel, and dice the potatoes into small cubes. Cut the meat into small cubes. In a large pan, add the vegetable oil, finely chopped onion, spices (curry, ginger, garam masala, cumin, sesame, chili, turmeric) and sauté to release the aromas.

  • Add the meat, then the broad beans, beans, potatoes, tomato pulp, salt, chives, some water, and cook for about 90 minutes. Add more water if the mixture seems dry. Adjust salt to taste and serve hot.

Notes

For faster cooking, you can blanch the broad beans and beans beforehand.

If you prefer, you can choose to reduce the legumes and increase the amount of meat.

You can also use other meats, such as chicken, but also pork or veal.
