Fruit Tart with Custard Cream

The fruit tart with custard cream is a dessert I love to make, especially when the nice weather starts and various types of fruits are available: it’s colorful and instantly uplifting. You can get creative with the decoration!

Ingredients

  • 2 cups All-purpose flour
  • 7 tbsp Butter
  • 1/2 cup Sugar
  • 2 Eggs
  • 2 cups Milk
  • 3 Egg yolks
  • 1/2 cup Sugar
  • 1/2 cup All-purpose flour
  • 1 Banana
  • 2 Kiwi
  • 3 Strawberries
  • 2 Oranges

Preparation

  • Place the flour on a pastry board, add the sugar, softened butter, and eggs, and start mixing until the dough is smooth and no longer sticks to your hands (you don’t need to work it too much).

    Roll out the dough with a rolling pin, wrap it around the rolling pin, using some flour to prevent sticking, and place it in a previously buttered and floured 11-inch baking pan.

    Make sure the dough adheres well to the edges of the pan, prick it with a fork, cover the entire surface with parchment paper, put some rice on the bottom as a weight, and bake at 350°F for about 30 minutes.

    Remove from the oven and take out of the pan.

  • In a saucepan, heat the milk over low heat. In a bowl, place the egg yolks, sugar, flour, and mix with a whisk.

    Pour the milk, almost boiling, into the egg cream, mix well, put back on the heat for a few minutes until it thickens, continuously stirring with a whisk.

    Let the cream cool slightly and put it inside the pastry shell, leveling it well.

  • Decorate with fruit to taste: I chose strawberries, kiwi, bananas, and oranges.

Tips/Advice

Since I consumed it immediately, I didn’t cover it with gelatin, but I recommend doing so to prevent the fruit from darkening. 

For the gelatin: put 1/4 cup of sugar, 1 tbsp of cornstarch, and 1/2 cup of water in a saucepan, then place everything on the heat. Stir with a whisk for about 3 minutes, it will have an almost white color, remove it from the heat and cover the fruit on the cake.
