Fusilli with Fried Zucchini

Ingredients

  • 6 oz fusilli
  • 2 teaspoons coarse salt (for pasta water)
  • 12.3 oz zucchini
  • 0.8 cups vegetable oil (for frying)
  • 0.8 cups olive oil (for frying)
  • to taste fine salt (to season the zucchini)
  • to taste black pepper (to season the zucchini)
  • to taste olive oil (to sauté the zucchini)
  • 2.1 oz grated Parmesan

Steps

  • Wash the zucchinis and slice them thinly using a mandoline or a knife.

  • In a skillet or slightly deep pan, add olive oil and vegetable oil. Heat it to about 300-320°F; the oil should not be too hot, or you risk burning the zucchini. Add the zucchini slices one at a time and cook for about 5 minutes or until they turn a nice golden brown, stirring occasionally. If the oil gets too hot, remove the pan from the heat for a few seconds.

  • As they cook, place the zucchinis on a plate lined with kitchen paper.

  • After frying all the zucchini, pat the slices with kitchen paper to remove excess oil.

  • In a pot, bring plenty of water to a boil, add coarse salt, and drop in the pasta.

  • In a pan, add a little olive oil, add the fried zucchini, sauté them lightly, and revive them with a ladle of pasta cooking water.

  • Drain the pasta while it’s still quite al dente and add it directly to the pan with the zucchini.

  • Add a bit of pasta cooking water and toss, finishing cooking.

  • Turn off the heat, add the Parmesan, and mix until fully absorbed. If the pasta seems dry, add a bit more cooking water.

  • Season with a bit of pepper and serve hot.

Tips and Advice

For this recipe, I used half vegetable oil and half olive oil, but to make the zucchini even more delicious, I recommend using all olive oil. The flavor will be much more intense.

If you notice the oil getting too hot, remove the pan from the heat for a few seconds.
