Galette with Strawberries and Blueberries

I love strawberries and buy them every time I find them fresh and juicy. I am also lucky to have an uncle who grows them and always brings me plenty. So I often make this Galette with Strawberries and Blueberries, which is always a hit with the whole family.

Ingredients

  • 9 oz strawberries
  • 1.5 tbsps sugar (1 tablespoon)
  • 1.4 fl oz lemon juice (2 tablespoons)
  • 1.6 cups all-purpose flour
  • 7 oz butter (soft, at room temperature)
  • 2.8 oz brown sugar
  • 2 tbsps juice (from macerated strawberries)
  • 3 tbsps strawberry jam
  • 0.07 oz gelatin sheets (one sheet)

Preparation

  • Wash, clean, and quarter the strawberries. Place them in a bowl with lemon juice and sugar, mix and let them rest in the fridge for about half an hour.

  • On a work surface, place the flour in a fountain shape, add the softened butter, sugar, and two tablespoons of juice from the macerated strawberries.

  • Knead until you obtain a smooth and homogeneous dough. Wrap in plastic wrap, and let it rest in the fridge for about half an hour.

  • On a sheet of flour-dusted parchment paper, roll out the dough with a rolling pin to a thickness of at least 0.8 inches. You’ll get a disk with a diameter of about 9.5 inches. The dough is very crumbly and delicate, so it’s best to roll it out on parchment paper and not move it further.

    Spread the base with the jam, leaving at least 0.4 inches from the edge.

  • Drain the strawberries and set the juice aside (keep about 1.7 fl oz). Cover the base with the strawberries, leaving at least 0.8 inches from the edge.

    Now fold the edges inward and place in the oven at 356°F for about 30 minutes.

  • Remove the galette from the oven and let it cool.

    Slightly heat the remaining 1.7 fl oz of strawberry juice, soak the gelatin sheet in cold water and then dissolve it in the warm juice. Cover the strawberries with this liquid. Place the galette in the fridge for at least two hours. Before serving, sprinkle the dough part with powdered sugar.
