Grilled Salmon Trout Fillets

Ingredients

  • 14 oz salmon trout (fillets with skin, 4 fillets)
  • 3/8 cup lemon juice (concentrated)
  • 1 1/3 tbsp olive oil
  • 1 tsp fine salt
  • 4 tsp chives (dried)

Preparation

  • Prepare the dressing by placing the lemon juice in a bowl, slowly adding the salt while whisking.

    Once the salt has completely dissolved, gradually add the oil while continuing to whisk until the ingredients are emulsified.

    Finally, add the chives and keep whisking.

  • Place a grill pan on high heat. When it’s very hot, place the salmon trout fillets on the grill, flesh side down.

    Cook for about 3 minutes, then turn to the skin side and continue cooking for about 6 minutes, brushing the surface with the dressing.

    Serve with chives and two teaspoons of dressing.
