We love hamburgers, but every now and then we like to change things up, and these Hamburgers with Chicory and Fava Bean Mayonnaise are truly amazing.
The idea was born from wanting to encapsulate a typical dish from Basilicata, fava bean puree with chicory, in a bun. Ah, I went to pick the chicory in a field in the province of Cuneo, I adore it! If you really can’t find chicory, you could also use Swiss chard. Try them and let me know!

Ingredients
- 5 hamburger buns (with beetroot)
- 5 hamburgers, fast food (beef)
- 2 cups water
- 1 1/4 cups frozen fava beans
- 2 tbsps milk
- 2 tbsps peanut oil
- 3 pinches coarse salt
- 7 oz potatoes
- 1.1 lbs chicory
- 2 pinches fine salt
- to taste olive oil
- 1 clove garlic

Put 2 cups of water in a pot, add a pinch of salt and the shelled fava beans. Cook for about 20 minutes, until the fava beans are soft. Drain and let them cool.
In another pot, put plenty of water, the washed, peeled, and halved potatoes (according to size). Add a pinch of salt and cook for about 20 minutes, until they are soft. Drain and mash with a fork or potato masher. If you prefer, you can also boil the potatoes with the skin on and peel them once cooked.
In a blender, put the fava beans, half of the mashed potatoes, half of the milk, and blend well until you get a smooth and homogeneous cream.
Now put this cream in the blender container, gradually add the remaining potato puree, the remaining milk, and the oil in a thin stream. Blend until you get a mayonnaise-like cream.
Clean the chicory, boil it in plenty of salted water. Then let it drain well in a colander. In a pan, put a little olive oil, a clove of garlic, and the chicory, let it flavor for a few minutes. Adjust the salt if necessary.
Cut the buns in half, put a generous spoonful of fava bean mayonnaise on the surface of the bottom half of the bun, place a little chicory, the well-cooked hamburger on top, then more chicory and fava bean mayonnaise. Close it all with the other half of the bun.
