I love nuts, I enjoy adding them to desserts, and I find these Hazelnut Cookies to be truly delightful. They are similar to Cantucci, but not exactly the same.

Ingredients
- 1/2 cup Sugar
- 2 3/4 cups All-purpose flour
- 1 1/2 tsp Baking powder (half a packet)
- 1 packet Vanillin
- 3/4 cup Toasted hazelnuts
- 3 medium eggs
- 1 Grated orange zest
Preparation
Remove the shell from the hazelnuts, then preheat the oven to 392°F, cover the baking tray with parchment paper, and place the hazelnuts on top.
Leave them in the oven for one or two minutes, being careful not to burn them, as they will become bitter.
Take them out of the oven, let them cool slightly, remove the dark skin, and divide them in half.
In a bowl, mix the sugar, eggs, grated orange zest, vanillin, and beat well with a whisk.
Add the flour mixed with the baking powder, knead the dough, place it on a work surface, and work it until it is well combined and smooth.
Finally, add the hazelnuts and knead well until they are well incorporated.
Place parchment paper on a baking sheet, divide the batter into two strips on top, and bake for 20 minutes at 356°F on the middle rack of the oven.
Take out the two rolls, cut them into slices about 0.4 inches thick, place the slices back on the baking tray, and brown on both sides at 356°F for 3/4 minutes each side.
Tips/Advice
Do not flatten the rolls. Leave them rounded, they will flatten slightly during baking.
