What can you do with 1 kg of apples? Why, the Invisible Apple Cake, of course, a truly delicious dessert that is prepared quickly and with few ingredients. I usually bake it when I don’t have much time, but also when we’re invited somewhere and I need a last-minute cake.

There’s no need for complicated procedures; the longest part is slicing the apples thinly. If you have a food processor that slices, the times will shorten considerably.

I recommend not using too mealy apples; you need nice firm ones that won’t crumble and will stay firmer.

Ingredients

  • 2.2 lbs apples (whole, about 1.76 lbs cleaned (6 or 7 whole apples))
  • 3.4 tbsp lemon juice
  • 4 tsp sugar
  • 1 tsp ground cinnamon
  • 4 eggs
  • 2.1 oz brown sugar (plus sugar needed to sprinkle on cake surface)
  • 7 tbsp milk
  • 1.8 oz butter
  • 3.5 oz all-purpose flour
  • 1 packet baking powder (0.56 oz)
  • as needed powdered sugar (to decorate the surface)

Steps

  • Put the lemon juice in a bowl, wash and slice the apples thinly with a peeler, let them macerate in the lemon adding 4 teaspoons of sugar and the cinnamon.

  • Beat the eggs with the brown sugar until frothy. Add the melted butter, the milk, and beat again.

  • Now sift the baking powder and flour and add them to the mixture, beating again with the whisk to mix the ingredients.

  • Gently pour part of the apples (set aside one or one and a half to use for decorating the surface of the cake) into the egg mixture and stir with a spatula.

  • Transfer the apple mixture into a greased and floured 9-inch (or 9.5-inch if you prefer it wider) pan.

  • Sprinkle the surface with brown sugar.

  • Arrange the apple slices you set aside on the surface, sprinkle with a little brown sugar and bake at 350°F for about 50/55 minutes.

  • Unmold it and remove it from the pan when it’s already cold.

  • Dust with a little powdered sugar and enjoy!

Tips, Advice

You can also add one or two more apples, in this way you’ll get a creamy texture, almost like an apple pudding.
