Lattice Puff Pastry Cake with Custard and Apples

Easy, quick, with a few ingredients that you probably already have at home. One of the tastiest and simplest cakes I’ve ever tried to make. Just start, the sooner you make it, the sooner you enjoy it!

Ingredients

  • 2 cups milk
  • 2/3 cup sugar
  • 1/2 cup all-purpose flour
  • 3 egg yolks
  • 1 teaspoon vanilla extract
  • 2.2 lbs apples (to be peeled, about 6 apples)
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup lemon juice
  • 2 puff pastry (round weighing 230 g each)

Steps

  • You can find the custard recipe by clicking here: How to make: Custard, but follow the quantities indicated in the ingredients of this recipe. The custard should be quite firm, not too liquid.

  • Wash and peel the apples. Remove the core and then cut them into cubes.

  • Place them in a pot with the sugar, lemon juice, and cinnamon. Cook them for about 40 minutes; they should reduce by at least half and lose most of the water.

  • Line a 11-inch diameter baking pan with the first puff pastry. Cover it with custard. Leave at least a half-inch from the edge empty.

  • Now pour over the apple puree and cover the entire surface.

  • Place the second puff pastry on top.

  • Use the tines of a fork to seal the edges well, so the filling does not spill out.

  • With a pizza cutter or a knife, draw a grid on the surface of the pastry.

  • Poke the corners of the squares with a toothpick so that air escapes during cooking and the puff pastry doesn’t puff up.

  • Sprinkle the surface with some brown sugar.

  • Bake at 356°F (180°C) for about 30-35 minutes.

  • Dust with some powdered sugar and enjoy!

Suggestions, Tips

I recommend preparing a fairly firm custard to prevent it from spilling out during baking.

The apple puree should not be too liquid.
