Marshmallow fondant is a paste used to decorate cakes or desserts, mainly used in cake design. I have always been curious about its preparation and in this case, I wanted to use white marshmallows, so I can then color the paste as I please.

Ingredients
- 2.8 oz marshmallows
- 1 1/4 cups powdered sugar
- 2 tablespoons water (to add to the marshmallows)
- as needed food coloring (gel)
Preparation
In a double boiler, melt the marshmallows by adding two tablespoons of water.
It will take about 10 minutes, and when they are completely melted, add 50g (about 1/3 cup) of sugar. Once combined, remove the pot from the heat.
On a work surface, spread a layer of powdered sugar and pour the melted marshmallows on top.
With hands dusted in powdered sugar, start kneading the mixture, adding more sugar as it gets absorbed.
You should get a soft and smooth dough, which you will let rest at room temperature for at least 12 hours before using it.
At this point, you can use it white or color it as you like.
If your marshmallow fondant is too soft, add more sugar; if it is too hard, add a little water.
To prevent the paste from sticking to your hands, always dust them with powdered sugar or corn starch.
