Mille-feuille with Orange Cream

This year, for Father’s Day, I decided to make a delicious Mille-feuille with orange cream, dairy-free, a real treat that everyone ended up loving! Of course, perfect for any sweet occasion!

Ingredients

  • 2 puff pastry (rectangular, 9.35 oz each)
  • 2 tablespoons brown sugar
  • 5 fl oz orange juice (equals about 2 oranges)
  • 10.6 oz sugar
  • 6 eggs (medium)
  • 2 orange zest (grated from 2 oranges)
  • 3.5 oz butter
  • 2 tablespoons cornstarch (leveled)
  • 1 sheet gelatin leaf (0.07 oz)
  • as needed powdered sugar

Preparation

  • Take the two rolls of puff pastry and divide each into 6 equal parts (cutting it in half vertically and into three parts horizontally). Place the puff pastry rectangles on the baking tray covered with parchment paper, sprinkle with brown sugar, prick with a fork, and bake for 15 minutes at 356°F.

  • Put the orange juice with 5.3 oz of sugar in a saucepan and cook over low heat. In a bowl, whisk the eggs with the remaining 5.3 oz of sugar. As soon as the orange juice starts to boil, pour it into the bowl with the eggs, continuing to whisk. Return everything to the saucepan, add the grated orange zest, and continue stirring with the whisk until it thickens (it will take a few minutes).

    Remove from heat, let it cool slightly, add the butter cut into pieces and the gelatin sheet previously soaked in cold water and squeezed. Stir with a whisk and let it cool.

  • For assembly, place a pastry sheet on a plate, spread it with orange cream, place another sheet and again with the cream, and finally the last sheet. Do the same with the remaining ingredients. You will have 4 mille-feuilles of three layers each, approximately 5×4.3 inches in size. If desired, you can sprinkle the surface with powdered sugar.

Tips/Advice

With these ingredients, the cream will not be very firm, but you can increase the gelatin if you prefer a firmer cream. If you prefer, you can make three mille-feuilles with 4 layers.
