Mini Savory Tricolor Millefoglie

I thought of these appetizers for June 2nd, Republic Day, since they resemble the tricolor: the green of the pesto, the white of the spreadable cheese, and the red of the radishes. But you can prepare them for any occasion; they are super easy and super quick. For the Mini Savory Tricolor Millefoglie, you will need only three ingredients (crackers or pastry sheets, pesto, and spreadable cheese) that you usually have in your pantry.

In this recipe, I used green bean pesto, but you can choose the one you prefer. Here are links to various pesto recipes, so you can pick the one you like best:

Ingredients

  • 12 crackers (I used Pavesi Sfoglie)
  • 1/4 cup pesto (choose the flavor you prefer)
  • 1/4 cup spreadable cheese (fresh)
  • 1/3 oz grated Parmesan cheese
  • 4 radishes
  • to taste olive oil (to season the radishes)
  • to taste fine salt (to season the radishes)

Steps

  • For the crunchy part of this recipe, you can use crackers. I used Pavesi Sfoglie because I find them slightly thicker and smaller, so I preferred them.

  • Spread about a teaspoon of pesto (the kind you like best) on a pastry sheet. Try to level it well and avoid spilling over the edges.

  • Mix the spreadable cheese with the grated Parmesan cheese, then put about a teaspoon on a pastry sheet and level it well.

  • Place one sheet on top of the other.

  • Now add the last ingredient, the radishes. Wash them well, remove the roots and leaves.

  • Cut three radishes into fairly thin slices, season them lightly with a bit of salt and a little oil. Place them on the pastry sheet with the cheese, forming the petals of a flower.

  • From the fourth radish, cut out red slices that will serve as the central part of the flower. Ready to be enjoyed in one bite!
