I thought of making Mint and Lemon Infused Water as a way to reuse the lemon peels used to make homemade Lemon Granita. I didn’t want to throw them away, so I put them in a glass with water and some mint leaves to infuse. Delicious! You can also use the lemon peel left over when you only use the juice of the citrus fruit.

Ingredients
- 1/2 cup water
- 1 lemon peel (boiled in water and sugar or from half a lemon)
- 2 sprigs mint
- 2 leaves sage (optional)
- 1 teaspoon sugar (optional)
- 1/2 cup tonic water
- 2 cubes ice
Steps
In a glass, place a lemon peel boiled in water and sugar (the one used to prepare homemade Lemon Granita, find the recipe link here), the mint sprigs, and add 1/2 cup of hot water. If you prefer, you can add a teaspoon of sugar or honey, and if you like, even two sage leaves. Of course, instead of the lemon peel used for homemade Granita, you can use the peel of half a lemon, without the white part, left over when you use lemon juice in your recipes.
Let it infuse for about an hour, stirring occasionally.
Strain your infusion using a strainer.
Add 1/2 cup of tonic water. If you prefer, you can also just add plain water, depending on your taste.
Now drop two ice cubes into the glass, stir again, decorate with a few mint leaves and a slice of lemon.
Enjoy it chilled!
