The No-Knead Ciabatta Bread is very easy to prepare. It uses dry yeast in very small quantities, as it requires a long rising time. Suitable for those who are not very practiced in baking but still want to prepare a bubbly and crunchy bread. In the video, the moment it is cut: crunchy, soft, bubbly, really a delight.

Ingredients
- 2 cups Manitoba flour (strength W400)
- 2 cups all-purpose flour
- 1.7 cups water
- 0.07 oz dry yeast
- 3 pinches fine salt
Instructions
In a large bowl, pour the two flours together with the yeast.
Add the water and start mixing with a spatula.
Now add the salt and mix the dough a bit more.
Continue mixing the dough well with a spatula using upward and downward motions, flipping the mixture about ten times.
Do not touch it with your hands, as it is very hydrated and sticky.
Cover the bowl with a sheet of aluminum foil and let the dough rest for 18 hours in a sheltered place.
After the time has passed, the dough will be bubbly and well-risen, but definitely soft and sticky.
Place a large sheet of aluminum foil or plastic wrap on a surface.
Generously sprinkle it with flour, making sure not to leave empty spaces, otherwise the dough will stick.
Pour the dough on it using a spatula.
Grease the oven tray with oil, take the aluminum foil with the dough from two opposite sides (it’s better if someone helps you) and flip it onto the tray itself.
Try to shape it into a slightly elongated form.
Cover it with a tea towel and let it rise for another two hours.
Heat the oven to 428°F, place a glass of water inside (this will prevent the crust from hardening too much and provide the right humidity during baking), position the tray with the dough in the middle and bake for about 35 minutes.
After baking is complete, turn off the oven, remove the glass of water, and let the bread cool in the oven, keeping the door slightly open.
You will obtain a bubbly and slightly crunchy bread.
Tips/Advice
The dough will be very soft and sticky. Work it only with the spatula.
Sprinkle the aluminum foil or plastic wrap with plenty of flour to prevent the dough from sticking.
