Do you like the aroma of orange spreading throughout the house? Then why not try my Orange Squares (Cookies) flavored with the zest of this fragrant citrus fruit? Great for both breakfast and snack time!

Ingredients
- 2.8 oz Sugar
- 2 Eggs (medium)
- 3.5 oz Butter
- 3.2 cups Manitoba Flour
- 1 packet Baking Powder
- as needed Brown Sugar
Preparation
Place the egg yolks and sugar in a bowl and beat with a whisk. Add the melted butter, grated orange peel, and gradually the flour with the baking powder. Mix well, if needed knead a little with your hands.
Place a sheet of parchment paper on the baking sheet (approximately 15.7×11.8 inches), pour the mixture and level it across the entire surface. I usually do this with a glass used like a rolling pin.
Sprinkle the surface with brown sugar, bake at 340°F for 15 minutes and then at 355°F for about 5 minutes, until they are golden. Do the toothpick test.
Remove from oven and cut squares of the desired size. I use a pizza cutter.
Notes
You can use all-purpose flour if you wish, although Manitoba flour makes the cookies softer.
The Impasti da Maestro line, base for sponge cake by Cameo, is also excellent.
Makes 25 squares of dimensions approximately 3.1×2.4 inches, I know squares is not the most appropriate term, but rectangles didn’t sound very good!
