What do you think of a very simple recipe, yet truly flavorful, ideal to serve even during festive days? I love roasts, and this simple Oven Roasted Beef, seasoned only with a mix of spices, is delightful.

Ingredients
- 2.6 lbs Veal round
- 3 teaspoons Coriander seeds
- to taste Bay leaves
- to taste Smoked salt
- to taste Marjoram
- 0.5 cup Balsamic vinegar
- to taste Olive oil
Preparation
Place the meat in a container, add all the spices and the salt.
The amount can vary according to your taste, so adjust accordingly.
Now add the oil, balsamic vinegar, and thoroughly massage the meat.
Cover it with aluminum foil and let it rest overnight in the fridge.
Now remove it from the container, heat up a pan well and sear the meat for at least 3 minutes per side to seal it.
Transfer it to the baking dish with the leftover marinade, cover it with aluminum foil to trap the steam, and cook for 1 hour at 285°F in a static oven.
Suggestions/Tips
Be careful not to overcook it, or it will be too dry. The meat inside should be pink.
I did not specify the amount for the spices as it depends largely on taste. Adjust according to your preferences.
