Pan-Fried Pea Pods or Shells

The Pan-Fried Pea Pods or Shells are truly amazing, a waste-not recipe you absolutely must try. I recommend using organic peas, untreated, I used those from my uncle’s garden, sweet, tender, and flavorful. Considering that the shells are about 70% of the total weight of this legume, recycling them reduces waste almost to zero! To obtain about 2.2 lbs. of cooked pods, you will need about 4.4 lbs. of peas to shell, keeping in mind that during cooking they will lose a little more water.

Ingredients

  • 1 1/2 lbs pea pods (cleaned about)
  • 6 cloves garlic
  • 2 glasses water
  • to taste hot chili pepper (optional)

Steps

  • For those who are not lucky enough to have an uncle with a well-stocked garden, I recommend buying peas from farmers’ markets, so the pods will be pesticide-free and untreated.

  • First, shell the peas, which you can use for other dishes. You can find ideas both at the beginning and the end of the recipe.

  • Now you need to remove the inner part of the shell, which is rather tough. You can start by slightly bending the tip of the pod and pulling it towards you.

  • Try to be gentle and not pull too hard, otherwise, you risk breaking it.

  • Now remove the strings that are still present.

  • Once you have finished this work, which is rather long and a bit tedious, wash the cleaned pods under running water. Let them drain.

  • In a pan, add some oil, the garlic cloves, and add the pea pods.

  • Salt, pour two glasses of water, cover and cook for about 20 minutes.

  • When they are tender but not yet fully cooked, remove the lid and let the remaining water evaporate. Enjoy your meal!

Hints, Tips

If you can’t consume all the pea pods, I recommend blanching them and freezing them to enjoy later.
