I didn’t want to call it “Carbonara,” because it resembles this dish but doesn’t follow the original recipe. Therefore, our Penne, bacon, and eggs (Carbonara-like) are a delicious and tasty reinterpretation!

Ingredients
- 11 oz Penne Rigate
- 3 Eggs
- 7 oz Smoked bacon (diced)
- to taste Chives
- 1 tbsp Parmesan cheese (grated)
- 2 tsp Coarse salt
- to taste Black pepper (ground)
Preparation
Bring plenty of water to a boil in a pot.
Meanwhile, sauté the bacon in a pan.
Take a bowl and beat the eggs together with the chives and a tablespoon of Parmesan.
As soon as the water boils, add the coarse salt and pasta.
Drain the pasta al dente (keep a little cooking water aside), put it back in the pot with the heat on low, add the bacon, and finally the beaten eggs.
If the pasta is too dry, add a little cooking water.
Mix well, sprinkle with pepper and the remaining tablespoon of Parmesan.
Serve hot.
