I didn’t want to call it “Carbonara” because it resembles this dish but does not follow the original recipe. Thus, our Penne, bacon, and eggs (similar to Carbonara) is a valid and tasty reinterpretation!

Ingredients
- 11 oz Penne Rigate
- 3 Eggs
- 7 oz Smoked bacon (diced)
- to taste Chives
- 1 tbsp Parmigiano Reggiano (grated)
- 2 tsps Coarse salt
- to taste Black pepper (ground)
Preparation
Bring a pot of abundant water to a boil.
Meanwhile, fry the bacon in a pan.
In a bowl, beat the eggs with the chives and a tablespoon of Parmigiano.
Once the water boils, add the coarse salt and the pasta.
Drain the pasta al dente (reserve some cooking water), return it to the pot with the heat on low, add the bacon and finally the beaten eggs.
If the pasta is dry, add a little cooking water.
Mix well, sprinkle with pepper and the remaining tablespoon of Parmigiano.
Serve hot.
