The Plumcake with smoked cheese and mortadella is very soft, fluffy, and tasty. With the addition of tomato sauce and oregano, it also has a pleasant taste reminiscent of pizza. If you don’t have fresh yeast, you can also use instant dry yeast.

Ingredients
- 2 2/3 cups All-purpose flour
- 3 Eggs
- 3/8 cup Milk
- 3/8 cup Olive oil
- 0.45 oz Fresh yeast
- 5.3 oz Smoked scamorza cheese
- 5.3 oz Mortadella
- 3 pinches Fine salt
- 2 pinches Dried oregano
- 4 tbsps Tomato sauce (1 tbsp to be placed on surface)
- as needed Butter (spray, non-stick baking spray)
Preparation
In a glass, mix two finger-widths of warm water, the yeast, half a teaspoon of sugar, and a teaspoon of flour (taken from the flour for the plumcake), stir until the yeast has completely dissolved, and let it rest for a few minutes.
When you see foam on the surface, the yeast will be activated.
Meanwhile, in a bowl, beat the eggs, milk, oil, and 3 tablespoons of tomato sauce with a whisk until well combined.
In another bowl, mix the flour, add the egg mixture, the activated yeast, the diced smoked cheese and mortadella, oregano, salt, and mix well with a spoon.
Mix the ingredients well, and if necessary, adjust the salt.
Let the dough rest for about half an hour, you will see it slightly risen.
If necessary, cover it and place it in a warm place.
Spray with butter (non-stick baking spray) and flour a 10.6×3.9 inch loaf pan, place the mixture inside, and decorate the top with the remaining tablespoon of tomato sauce.
Bake at 356°F (fan oven) for about 45/50 minutes.
Before removing from the oven, check with a toothpick if it is cooked.
Suggestions/tips
I used 0.45 oz of fresh yeast because I needed a quick rising. If you have more time, you can use less yeast and increase the resting time.
