Ingredients

  • 1/2 cup Basmati rice
  • 1 pinch coarse salt (for cooking Basmati rice)
  • 3 tomatoes (weighing 80 g each)
  • 4 nectarines (weighing 80 g each)
  • 1/2 cup red beans (steamed and already drained)
  • 1/2 cup corn, sweet, canned, drained
  • 1.8 oz salmon (frozen for raw consumption)
  • 3 tbsps soy sauce
  • 2 tbsps olive oil
  • 1 tsp miso
  • 1 tsp oyster sauce
  • 3 tbsps lemon juice

Steps

  • Place all the ingredients inside a small jar, close it with the lid, and shake it well until all the ingredients are well blended.

  • Cook the Basmati rice in a small pot of water with a pinch of coarse salt, follow the cooking time indicated on the package.

  • Once cooked, drain the rice with a colander, cooling it with cold water.

  • Now you just have to compose the Poke Bowl, with these quantities you will get two. Start by putting the rice in two bowls, dividing it in half.

  • Add the red beans, the peach cut into cubes, and the corn. You can substitute the peach with watermelon and also add thinly sliced cucumber if you like.

  • Dice the tomatoes, put them in the bowl and on top place the already frozen salmon slices. If you prefer, you can cut it into cubes.

  • And now season the two bowls with the special sauce, mix and enjoy with chopsticks or a fork, whichever you prefer. You can add crunchy onions!
