Potato Croquettes with Flavored Breadcrumbs are a main dish that usually everyone likes. These are tasty and gooey, with an ingredient that makes them unique: a crispy and flavorful bread, prepared with just a few steps.

Ingredients

  • 3 1/2 oz stale bread (very dry bread)
  • 1 clove garlic
  • 2 pinches dried oregano
  • 2 tbsps olive oil
  • to taste chopped parsley
  • to taste fine salt
  • 1.1 lbs potatoes
  • to taste coarse salt
  • 2 oz grated Parmesan cheese
  • 1 1/2 oz breadcrumbs (crispy and flavored)
  • 1 egg
  • to taste ground black pepper (freshly ground)
  • to taste chopped parsley
  • to taste fine salt (if necessary)
  • 1 mozzarella (about 4.5 oz)
  • 3 1/2 oz cooked ham
  • 2 oz breadcrumbs (crispy and flavored)
  • to taste olive oil (to drizzle over the croquettes)

Steps

  • Place the dry bread, garlic, parsley, and oregano in a mixer and start chopping everything. Add the olive oil, and a pinch of salt if needed.

  • Chop everything until you obtain a rather fine mixture.

  • Put a little olive oil in a non-stick pan, pour in the flavored breadcrumbs and toast them well. They should be crispy. Then pour them onto a plate.

  • Wash the potatoes, cut them into chunks and boil them in plenty of salted water. You can decide to peel them before or after cooking. They are done when they can be easily pierced with a fork.

  • Drain the potatoes, mash them and put them in a bowl. Add the crispy flavored breadcrumbs, grated Parmesan cheese, egg, parsley, and freshly ground black pepper. Taste and add salt if necessary.

  • Mix well until you obtain a compact, smooth, dry but soft mixture.

  • Drain the mozzarella and cut it into rather small cubes. Prepare the croquettes by taking about 1 1/4 oz of the mixture, putting small pieces of mozzarella and ham inside. Close the croquette well, trying to compact it a little with your hands, shape it into a cylinder.

  • Roll the croquettes in the crispy and flavored breadcrumbs.

  • Place the croquettes on an oven tray lined with parchment paper, drizzle with a little olive oil and bake at 350°F for about 20 minutes.
