Ingredients
- 2.2 lbs potatoes (to peel)
- 14 oz green beans
- 2 eggs
- 1/2 cup breadcrumbs
- 3 oz Parmigiano Reggiano PDO (grated, of which 1 oz to sprinkle on the surface)
- 4.5 oz mozzarella
- 3.5 oz Montasio (or Emmental slices)
- 2 pinches fine salt
- 2 teaspoons coarse salt
- 2 pinches ground black pepper
- 5.3 oz cooked ham (sliced)
- as needed olive oil
Preparation
Wash and trim the ends of the green beans. Put plenty of water in a pot; once boiling add the coarse salt and the green beans. Boil until cooked but still crisp (this will take about 15 to 20 minutes). Now drain them and place them in a bowl.
Wash, peel and cut the potatoes into two or four pieces depending on size (this will help them cook faster). Drain the potatoes and mash them with a potato ricer or masher into a bowl. Add the fine salt and the pepper.
Now add 3 oz of grated Parmigiano, the eggs and the breadcrumbs.
Mix until you obtain a smooth, homogeneous mixture.
Line a rectangular baking pan with parchment paper (about 12 1/4 x 9 inches). Cover it with 3/4 of the potato mixture, smoothing it well and also covering part of the sides.
Make a layer with the sliced ham.
Place the blanched green beans over the ham layer (reserve 5 or 6 to place on the surface).
On top make a layer with the Montasio (or Emmental) slices, then add the mozzarella that has been drained and cut into small cubes.
Try to crumble the remaining potato mixture over the cheese layer, add some green beans cut into small pieces, sprinkle with 1 oz of grated Parmigiano and dot with small pats of butter.
Bake at 356°F for 25 minutes; during the last 5 minutes brown under the broiler.
Tips/Advice
You will appreciate the lightness of this savory pie and, if you wish, you can omit the ham to make it a vegetarian dish.
